Winemaker Johannes treats each Spiess wine as if it were his own child. Like any modern parent, that means handling each one as an individual and give them freedom to make their own choices in the cellar. The estate’s new vaulted cellar was completed in 2007, ready to store over 200 French oak barriques.
Once they arrive in the cellar, the grapes undergo gentle pressing and fermentation in stainless steel tanks and Tonneaux barrels. The reds are subjected to classic open maceration, encouraging them to develop their own special character without unnecessary intervention. All the wines are matured in a combination of steel tanks and carefully selected oak barrels to achieve optimal freshness, character, and longevity: wines that reflect and respect their regional roots, yet with a modern focus all their own.
